Ingredients:

20 white boiler onions

1 cup buttermilk

2 eggs

1 cup flour

1 cup whole-wheat bread crumbs

1 tbsp. smoked paprika

1 tsp. salt

1 tsp. ground black pepper

1 tsp. granulated garlic

¾ tsp. chili powder

Olive oil spray

 

Directions:

Place a parchment liner in the Air Fryer basket.

Slice off the root end of the onions, taking off as little as possible.

Peel off the papery skin and make cuts halfway through the tops of the onions. Don’t cut too far down; you want the onion to hold together still.

In a large bowl, beat the buttermilk and eggs together.

In a medium bowl, mix the flour, bread crumbs, paprika, salt, pepper, garlic, and chili powder.

Add the prepared onions to the buttermilk mixture and allow to soak for at least 10 minutes.

Working in batches, remove the onions from the batter and dredge them with the bread crumb mixture.  Place the prepared onions in the Air Fryer basket in a single layer.

Spray lightly with the olive oil and air fry at 360ºF (182ºC) for 8 to 10 minutes, until golden and crispy. Repeat with any remaining onions and serve.
