Ingredients:

1 pound ground turkey

1 tablespoon olive oil

1 onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 can (14 oz) diced tomatoes (or use fresh diced tomatoes)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

2 tablespoons chili powder

1 teaspoon ground cumin

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional)

Salt and pepper to taste

Fresh cilantro and shredded cheddar cheese for garnish (optional)

 

Preparation: 

In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until softened.

Stir in minced garlic and diced bell peppers. Cook until the vegetables are tender.

Add ground turkey to the pot and cook until it is browned and cooked through.

Pour diced tomatoes, black beans, and kidney beans into the pot. Stir in chili powder, ground cumin, paprika, cayenne pepper (if using), salt, and pepper.

Bring the chili to a simmer, cover, and let it cook for about 20 minutes to allow the flavors to meld.

Garnish with fresh cilantro and shredded cheddar cheese if desired before serving.
